9 Weeks Pregnant- Baby #3 ...following my dreams... -Cynthia Hello, So it is my Husbands Birthday tomorrow (March 4th) so since last Tuesday we have been Celebrating "Birthday Week" this happens to be our very first Year doing Birthday Week. So it has been really fun, because he calls what he wants for dinner for the Week. Of course he would pick something pretty amazing like homemade Mac n Cheese! I wasn't gonna say no to that. He requested to have bacon added to it as well. So I searched on Pinterest a bit...and found this awesome recipe.... Best Ever Homemade Mac & Cheese So here is my version of the recipe. Enjoy (we sure did!) Ingredients: 2-4 Chorizo Sausages 100-200g of bacon (8 ish pieces) 16 oz macaroni pasta 1 lb medium cheddar cheese 8 oz gouda cheese 5 tbsp butter 4 tbsp flour 2 cans evaporated milk 1/2 cup heavy cream (I used whipping cream) 1/4 tsp ground mustard 1/8 tsp cayenne pepper 1/4 tsp black pepper 1/2 tsp salt Directions: *I cooked the bacon ahead of time (put tin foil on a baking sheet and spread bacon onto the sheet, put in 350 degree oven until nice and crispy) *I cooked the chorizo ahead of time. (put in a small frying pan, with about 1/4 cup of water and medium heat for about 15 minutes...once the water disappears I then brown it. 1. Bring large pot of water to a boil and cook pasta until just about al dente, do not over cook. It will take about 6-7 minutes. 2. Grate Cheddar & Gouda Cheese into a big bowl (we used our food processor with our grater attachment, so much quicker) 3. Drain pasta and set aside. 4. Now to make the roux. In a saucepan melt the 5 tbsp of butter over medium heat and whisk in the flour. Keep stirring for about 30 seconds (until it get's nice and heated through) 5. Slowly add 1 can of evaporated milk and whisk constantly, when it begins to get thick you can add the second can and whisk constantly until it get's thick and bubbly. 6. Add the heavy cream and the seasonings whisk and mix it all together. Bring it to a boil and then reduce heat and let simmer for 30 seconds more. 7. Remove from heat and add the cheese and stir until it is all melted. Then add the bacon & chorizo sausage and mix. 8. Put pasta back into it's pot and mix the cheese mixture with the pasta. 9. Pour mac 'n' cheese into a casserole dish. Place in 400 degree oven uncovered for about 20 minutes. Enjoy! Scroll down for the recipe step by step with pictures. 1. Cook the bacon. Place tin foil on a baking sheet and spread bacon out. 350 degree oven until the bacon is nice and crispy (mine ended up a little too crispy...hehe) Then I just chopped it all up and set it aside. 2. Cook the Chorizo Sausage. Place sausage in a pan with water and cover for about 15 minutes. Then once the water disappears brown the sausages. Cut up into nice bite sized pieces and set aside 3. Boil water (I like to add a little bit of olive oil and some salt to the water when it's boiling) then add the pasta until just about al dente, about 6-7 minutes. 4. Grate all that cheese. Hubby used the food processor with the grater attachment. So fast! 5. Make the roux. In sauce pan melt the butter over medium heat and add the flour. Stir with a whisk for about 30 seconds. 6. Slowly add 1 can of the evaporated milk and stir with the whisk constantly. When it begins to thicken add the second can very slowly and stir with a whisk until thick and bubbly. 7. Add the heavy cream and the seasonings and mix it all together. Bring to a boil and then reduce heat and let simmer for 30 seconds. 8. Remove from heat and add the cheese and stir until it is all melted. Then add the bacon & chorizo sausage and mix. Mix this all together with the pasta. 9. Pour Mac 'n' Cheese into a casserole dish and bake in a 400 degree oven for about 20 minutes. 10. Enjoy the yummy-ness you just created! Thanks so much for stopping by. ...following my dreams... -Cynthia Hello, Well this is going to just be a short and sweet little post! Jayden and I have our 6 Year Wedding Anniversary coming up (June 16th) which also happens to be Father's Day...which we are Celebrating with our Family and having a Big ol' BBQ at my Dad's Acreage. That being said we won't be able to Celebrate our Anniversary on our actual Anniversary...or the Day before or even the next Weekend. Pretty much every Weekend is booked up until after our Baby arrives. So we decided that we wanted to do something special in the meantime and do something small for now just to Celebrate a little bit. (We may go out for something Sweet on the actual Day of our Anniversary or a Coffee Date or something simple like that to Celebrate the actual day) We'll see. Jayden Proposed to me at this Beautiful little place about 20-30 Minutes from where we live. It's called Kelly's Bathtub, it is definitely a place that has my heart completely...and brings back so many memories when we go there. He Proposed to me the Middle of May of 2006 (I feel horrible for not remembering the actual date...lol...he doesn't either...we think the 17th) but I am not 100% on that. LOL so we'll just say Mid May <3 Gotta get some kisses in :) Seriously the love of my life <3 Our Yummy oh so romantic dinner :) Ham and Pineapple Pizza and a McDonald's Strawberry shake. LOL. Jayden gave me this Ring for our First Anniversary! (I obviously can't fit it because my fingers are pretty swollen right now) but I thought it was a must wear for our date that night. This is the bridge my Lovely Husband proposed to me on. (well more like beside) I seriously love it here. That was our date. It was special...short and sweet. I am looking forward to our BIG date...haha.
Thanks for stopping by. ...following my dreams... -Cynthia Hello, So this post is a little behind schedule...especially considering I finished Baby's blanket a while back. About a month ago now. It took me just under 1 month to complete this blanket (picking it up once and a while...not consistently every day...if that was the case I am sure I would have been finished by about 2 Weeks) I started "His" Blanket just after our Gender Reveal Party. I went out about 2 days later and picked out these colours for the blanket. I walked into Walmart knowing off hand that I wanted a cream color and a charcoal color...then matching it with the navy was an absolute must...holding them up all together got me so excited to start my project! This is the pattern I worked from...making some adjustments. It still blows my mind how these little human's are created and how they are forming inside of me :) So as I crochet this blanket I often think about my Baby being Knit in my womb <3 You can definitely see the texture of the blanket in the left picture above, I did back loop only to give it this ridge effect. I am totally in love with this pattern and I can see myself making a lot of these blankets over the years for baby shower gifts! Here I am showing off my work. I cannot wait to wrap my little man in this blanket when he arrives :) I am not a complete fan of the border I have on the blanket, but I thought it looked better with a border than without one. I just hate how you can see the little notches bleeding into the cream coloured yarn! Boo! But all in all I am still in love with this blanket! Each stitch worked on was myself thinking of our little bundle of joy to-be and how excited I am to finally meet him. 9 Months feels like an eternity, because the first day finding out to the end of the pregnancy seems to take Forever!
I can't wait to meet you my darling <3 Also just a FYI the title of this post is Vol.2...I did this because this was the same title I named my post for Isaiah's blanket. Although we didn't know the gender...so he got a green blanket. I like this one much more. Thanks for stopping by! ...following my dreams... -Cynthia Hello, Well for Spring Break we spent our time in Vancouver visiting my Brother-in-Law and his Family. (I will put a post up of our trip in a separate post...hopefully soon) So behind on my posting. Anyways this picture of Isaiah was taken March 29th, 2013. We chased him around the yard for about 30 minutes along with his older cousin (by 3 months) Isla! They are seriously so cute together! Melt's my heart to see how much he loves his cousin! So these next few pictures are going to be of us Celebrating Easter Sunday. Well more like Easter Sunday morning. Over the next few Years I will be doing a lot of preparation for Easter for our Children. Teaching them the True meaning of Easter. I also want to concentrate on giving them things they can have fun with and not just get a sugar high from all day. Don't get me wrong, I will at least put 1 chocolate bunny in their baskets when they are old enough...but for the most part it will be filled with fun activities they can do and hopefully Homemade items too! I didn't have much time to prepare this Year because we were away visiting, so the morning of I just whipped up his basket as quick as I was able to. So here it goes. Our little Man's "First Easter" (Last Year we didn't do anything for him) Now onto the egg hunting :) He still wasn't sure what to do with them, he wanted to hold onto them and not put them in the basket :) Haha Happy Easter Everyone. ...following my dreams... -Cynthia Hello, So Today is Mama & Baby kinda day. Isaiah and I had a wonderful breakfast together at the Old Grind here in town. We LOVE it there. We are in the middle of moving (getting organized now) so a few days ago we went out for breakfast together. We shared the breakfast bun they have and Isaiah loved it!!!! I am so excited for taking time once a week to do something with my boy. We won't always go out...we may just have a relaxing day inside playing games and doing crafts. But it sure is nice to get treated once and a while! I may be off of blogging until I get my life a bit more organized! Thanks for reading ;) ...following my dreams...
